Awesome Alpine Macaroni


This recipe is a collaboration between myself and my son Alex, who wanted to recreate a dish he enjoyed while visiting with friends in Switzerland.

Following a day of siteseeing in the Alps, they stopped for a bite to eat at a local restaurant. The host insisted that Alex try the Alpine Macaroni.  Not wanting to be rude, he agreed to order it and absolutely loved it. This recipe is the result of his recollection of that incredible meal!


Prep time:  30 minutes
Cook time:  20-25 minutes

1 - 16 oz. box of pasta (we used Ziti)
16 oz. (pint) of cream
1/2 pound of bacon
2 tablespoons of butter
1-1/2 cups green onions or shallots
1 clove of garlic
4 medium sized potatoes
1-1/2 cups of Gruyere Cheese
1-1/2 cups of mixed cheese of your choice (we used Cheddar, Swiss, Mozzarella and Gruyere)
salt and pepper to taste

Boil potatoes until tender.  Allow to cool, peel off skins and dice into 1/4" pieces.  At the same time, boil 16 oz. box of pasta as directed.  In a medium saucepan, melt two tablespoons of butter and saute onions and garlic.  Fry up 1/2 lb. of bacon in frying pan.  Allow to cool and dice into pieces. Mix in with onion/garlic and put aside.

Grease 9" x 13" pan and layer 1/2 cooked pasta and 1/2 cooked potatoes.  Season with salt and pepper.  Spoon out onion/garlic and bacon and cover with 1-1/2 cups of mixed cheese.  Spread remaining pasta and potatoes and season with salt and pepper.  Top with 1-1/2 cups of Gruyere Cheese.  Pour 16 oz. (pint) of cream evenly over entire dish.

Preheat oven to 400 degrees
Cook for 20-25 minutes or until cheese is brown on top
